For this baked prawn recipe with brandy for 4 guests you will need:
- 800 g of raw prawns
(they can be fresh or frozen, previously defrosted) - 60 ml of Brandy Fundador
(approx. 4 tablespoons) - 4 tablespoons of extra virgin olive oil
- 4 cloves of garlic, thinly sliced
- Coarse salt, to taste
- Freshly ground black pepper, optional
- 1 tablespoon of chopped fresh parsley
- ½ lemon, optional, for serving
These quantities allow the brandy to perfume the seafood without dominating it, achieving a perfect balance between the flavor of the prawn and the aromatic nuances of the brandy aged in Jerez casks.

- Preheat the oven to 200 °C.
