
The chef at the helm of the highest restaurant in Spain, offered a dinner for 50 diners at the second meeting of the “Fundador & Friends 2025” series
The terrace of the oldest winery in Jerez hosted an evening that combined signature cuisine paired with brandies and wines from the house

The terrace of Casa Fundador, the restaurant of the oldest winery in the Marco de Jerez, hosted an exclusive dinner for only 50 diners at the second appointment of the series “Fundador & Friends 2025”. The chef from Salamanca Fran Vicente, from the restaurant Élkar (Madrid), was in charge of signing an evening in which cuisine, cocktails and tradition.
The experience began with a guided tour of the facilities of Bodegas Fundador, which allowed attendees to delve into the origins of Jerez brandy. Afterwards, the dinner took place on the terrace of Casa Fundador, carefully decorated: dressed tables, warm light and floral details, all designed to achieve a cozy atmosphere.
Fran Vicente presented a very personal gastronomic proposal. The welcome drink —cocktail Fundador Índigo — was paired with creamy mojama with pickles and the baozi filled with cheek stews cooked with Harveys Oloroso. Next, a warm oyster with carrot emulsion was served, the white garlic with foie and Palo Cortado pearls accompanied by a Harveys Fino Premium. The red tuna belly with roasted pepper juice was paired with Fundador Doble Madera and Harveys Palo Cortado. And the Fundador Supremo 15 accompanied the Iberian pork with toasted hazelnuts.
The sweet course was closed with a selection of chocolates accompanied by Fundador Supremo 18YO. And it ended with a toast with the cocktail “MADrid 91”, the official proposal of the city of Madrid, created by the bartender Diego Cabrera and made with Fundador Sherry Cask Doble Madera. A tribute to the traditional and modern identity of the capital inspired by the Madrid torrija and the unique character of the Jerez brandy. An ending with the soul of Madrid and the essence of Jerez.
Alberto Pizarro, Brand Ambassador of Bodegas Fundador, explained in detail the selection of brandies, wines and cocktails and Fran Vicente, for his part, personally explained each dish and greeted each of the attendees, establishing a direct link with the public. The evening was enlivened with live music.
Upcoming Fundador & Friends dinners
The programming of Fundador & Friends will continue with the participation of chef Luis Alberto, from Casa Fermín (Oviedo) who will bring the flavors of Asturias to Jerez on August 28. He will be followed by David Méndez, from Berdo (El Puerto de Santa María) on September 26, and the cycle will be closed by Leon Griffioen, from the restaurant Código de Barra (Cádiz), recognized with a Michelin star.
Each meeting offers a signature menu paired with the best wines and brandies of the house.
