The terrace of Casa Fundador lit up last night to kick off the gastronomic cycle Fundador & Friends 2025, a series of events that combines haute cuisine with the exquisite brandies and wines from the oldest winery in the Marco de Jerez. This is the third consecutive year of this event, which stands out for offering a unique experience to a select group of diners in a relaxed atmosphere accompanied by live music.

The Culinary Art of Juan Viu

The chef from Cadiz, Juan Viu, in charge of the renowned restaurant Mare in Cadiz, was responsible for inaugurating this cycle with a menu deeply inspired by seafood cuisine. Viu took the attendees on a sensory journey through the traditional flavors of his land, reinterpreting his mother’s and grandmother’s recipes with a modern and refined look.

Among the dishes presented, stand out:

  • Aguaillo and tuna in lard
  • Piriñaca from Cadiz
  • Anchovy gazpachuelo
  • Squid toffee
  • Whiting in white
  • Tuna in tomato in the style of Grandma Trini
  • Retinta cow with seaweed and razor clam bourguignon
  • Cherry dessert, cream and oysters in mango pickle

Perfect Pairing with Premium Brandies

Each dish was accompanied by a select reference from the winery, highlighting the refreshing Fundador Índigo, a blend of Fundador Doble Madera with ginger beer and lime, as well as the prestigious Fundador Supremo 15 and 18, and iconic varieties such as Harveys Fino Premium, Harveys Amontillado and Palo Cortado. Alberto Pizarro, Brand Ambassador of Bodegas Fundador, and Juan Viu guided the diners through an evening full of flavors and stories, explaining each pairing and the careful preparation behind each dish.

A Magical Atmosphere

The evening began with a guided tour of the historic winery and culminated with live music, courtesy of Nono García and Paco Muñoz, who created a magical atmosphere under the stars on the terrace of Casa Fundador.

Upcoming Dates for the Fundador & Friends 2025 Cycle

The cycle will continue with events scheduled for the coming months, highlighting:

  • July 10: Chef Fran Vicente from Élkar, Madrid.
  • August 28: Chef Luis Alberto from Casa Fermín, Oviedo.
  • September 26: Chef David Méndez from Berdo, El Puerto de Santa María.
  • October 17: Chef Leon Griffioen from Código de Barra, Cádiz.

Each of these chefs, together with the winery, will design an exclusive and different menu, paired with the best wines and brandies from Fundador, thus consolidating Casa Fundador as an essential destination for lovers of haute cuisine and author pairings.
